Black Pepper Chicken

A family favorite loaded with bold flavors, perfect for weeknight dinners and gatherings.

  • 500 g boneless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 tablespoon freshly ground black pepper
  • 1 large onion, sliced
  • 1 green bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Salt to taste
  • 1 teaspoon sugar
  • Green onions for garnish, chopped

Instructions

  1. In a bowl, combine the chicken pieces with freshly ground black pepper and a pinch of salt. Let them marinate for at least 15 minutes for maximum flavor.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and stir-fry until browned but not fully cooked. Remove the chicken from the skillet and set it aside.
  3. In the same skillet, toss in the sliced onion and green bell pepper. Sauté for 2-3 minutes until they begin to soften.
  4. Add the minced garlic and continue to sauté for one minute until fragrant.
  5. Return the chicken to the skillet, incorporating the soy sauce, oyster sauce, and sugar. Stir well to ensure an even coating.
  6. In a small bowl, mix the cornstarch with water to create a slurry. Pour this mixture into the skillet, stirring until the sauce thickens.
  7. Check the seasoning; adjust salt if needed. Cook until the chicken is fully cooked through, about an additional 5 minutes.
  8. Finish off by garnishing with chopped green onions before serving.

Notes

For a vegetarian option, tofu can be substituted for chicken. Serve with steamed jasmine rice or fluffy couscous.
