Blackened Shrimp Stroganoff

A delightful twist on classic stroganoff, featuring blackened shrimp in a creamy sauce over egg noodles.

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 8 oz egg noodles
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Season your shrimp with Cajun seasoning.
  2. In a skillet, heat olive oil over medium-high. Add the seasoned shrimp and cook until blackened and thoroughly cooked, about 3-4 minutes per side. Once done, remove the shrimp and set aside.
  3. In the same skillet, add the chopped onion and minced garlic. Sauté until fragrant, about 2 minutes, then introduce the sliced mushrooms, cooking until tender, around 4 more minutes.
  4. Pour in the chicken broth and bring it to a gentle simmer. Stir in the heavy cream and allow the mixture to thicken slightly, which should take about 3-5 minutes.
  5. Meanwhile, cook the egg noodles according to package instructions. Drain the noodles once cooked, reserving a little of the pasta water in case you need to thin the sauce later.
  6. Add the cooked shrimp back into the creamy sauce, mixing well. Season with salt and pepper to taste.
  7. Serve the sumptuous mixture over the egg noodles and garnish with fresh parsley.

Notes

For a lighter dish, consider using half and half instead of heavy cream. Can swap shrimp for chicken or tofu.
