Delightful baked oatmeal cups filled with ripe bananas and blueberries, perfect for breakfast or snacks.

Ingredients

  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • 1 cup milk (or almond milk)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it.
  2. In a large bowl, combine the mashed bananas with the milk and vanilla extract.
  3. Stir in the rolled oats, baking powder, and cinnamon until everything is well combined.
  4. Gently fold in the blueberries, being careful not to break them up too much.
  5. Evenly divide the mixture into the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Allow the cups to cool for a few minutes before removing them from the muffin tin.

Store leftovers in an airtight container in the refrigerator for up to 4-5 days or freeze for up to three months.
