Delightful breakfast quesadillas bursting with fresh blueberries and a creamy filling, perfect for brunch or a quick breakfast.

Ingredients

  • 2 tortillas
  • 1 cup blueberries
  • 1/2 cup cream cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • Butter (for frying)

Instructions

  1. Mix the cream cheese, Greek yogurt, honey, and cinnamon until smooth.
  2. Spread this creamy mixture evenly on one side of each tortilla.
  3. Sprinkle the blueberries over the creamy mixture on one of the tortillas.
  4. Place the other tortilla on top, cream cheese side down.
  5. Heat a skillet over medium heat and add a little butter.
  6. Cook the quesadilla for about 2-3 minutes on each side until golden and crispy.
  7. Cut into wedges and serve warm!

Notes

For an extra crispy quesadilla, keep cook it a minute longer on each side. Substitute plain yogurt for Greek yogurt or use dairy-free cream cheese for a vegan option.
