A delightful blend of sweet blueberries and creamy ricotta wrapped in crispy tortillas, perfect for breakfast or brunch.

Ingredients

  • 2 tortillas
  • 1 cup blueberries
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon cinnamon
  • 1 tablespoon honey (optional)
  • Butter or oil for cooking

Instructions

  1. Combine ricotta cheese, blueberries, and cinnamon in a bowl. Drizzle in the honey for a sweeter touch.
  2. Heat a non-stick pan over medium heat and add a teaspoon of butter or oil.
  3. Place one tortilla on the pan and spread the blueberry mixture evenly over it.
  4. Top with the second tortilla.
  5. Cook until the bottom is golden brown, about 3-4 minutes.
  6. Carefully flip the quesadilla and cook the other side until it’s also golden and crisp.
  7. Remove from the pan, slice into wedges, and enjoy warm.

Notes

Use fresh blueberries for the best flavor. Leftovers can be stored in an airtight container for 2-3 days.
