  • 1 cup fresh or frozen blueberries
  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. Combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract in a large bowl. Mix until smooth.
  3. Stir in the rolled oats, baking powder, cinnamon, salt, and blueberries. Gently fold to keep the fruit intact.
  4. Pour the mixture into the greased baking dish, spreading it evenly.
