A delightful and nutritious breakfast or snack dish that combines creamy cottage cheese with fresh blueberries.

Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1 cup fresh or frozen blueberries
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cottage cheese, rolled oats, blueberries, eggs, milk, honey, vanilla extract, baking powder, and salt.
  3. Mix well until all ingredients are fully combined.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 25-30 minutes, or until the top is golden brown and set.
  6. Let it cool slightly, then cut into squares and serve warm.
