Blueberry Greek Yogurt Bites

Delightful no-bake snack made with creamy Greek yogurt and fresh blueberries.

Ingredients

  • 1½ cups plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¾ cup fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5–6 minutes, stirring frequently, until the berries soften and release their juices. Lightly mash until jam-like. Allow the compote to cool.
  2. Make the Yogurt Base: In a medium bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth. Adjust sweetness as needed.
  3. Assemble the Bites: Spoon 1 tablespoon of yogurt into each cavity of a mini muffin tray. Add ½ teaspoon of blueberry compote on top. Swirl gently with a toothpick.
  4. Freeze: Place the tray flat in the freezer for at least 120 minutes until firm.
  5. Serve & Store: Carefully remove the bites from the tray and place them in an airtight container in the freezer. Thaw for 2–4 minutes before serving.

Notes

For added crunch, sprinkle some nuts or granola over the compote before freezing. These bites can be made using other berries too!
