A delightful twist on a classic breakfast favorite, these Blueberry Pie Overnight Oats are creamy oats topped with juicy blueberries, perfect for busy mornings.

Ingredients

  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup Greek yogurt (or a dairy-free alternative)
  • 1 cup milk (dairy or plant-based)
  • 2 tablespoons maple syrup or honey
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Chopped nuts (optional, for topping)

Instructions

  1. In a medium bowl, combine the rolled oats, milk, and yogurt.
  2. Stir in the maple syrup, vanilla extract, and cinnamon until everything is well mixed.
  3. Gently fold in the blueberries, saving a few for topping.
  4. Cover the mixture and refrigerate overnight (or at least 4-6 hours).
  5. In the morning, give your oats a good stir. If they’re too thick for your liking, add a splash more milk.
  6. Serve in bowls, topped with the remaining blueberries and a sprinkle of nuts if desired.

Notes

For a thicker consistency, reduce the milk slightly. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
