  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a mixing bowl, combine the olive oil, apple cider vinegar, minced garlic, smoked paprika, brown sugar, salt, black pepper, and optional cayenne pepper to create a marinade.
  2. Place the chicken thighs into the marinade, ensuring they are thoroughly coated. Allow them to marinate for at least 30 minutes at room temperature, or for up to 4 hours in the refrigerator for enhanced flavor.
  3. Preheat your oven to 425°F (220°C).
  4. Transfer the marinated chicken thighs to a baking sheet lined with parchment paper, positioning them skin-side up.
  5. Roast the chicken in the preheated oven for 35-40 minutes until the skin is golden and crispy, and the internal temperature reaches 165°F (74°C).
  6. Before serving, garnish with chopped parsley.
