A decadent breakfast that combines thick slices of brioche with creamy bacon and a sweet maple bourbon glaze.

  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F. Arrange bacon slices on a wire rack set over a baking tray. Bake for about 15 minutes until crispy, then transfer bacon to paper towels and finely chop.
  2. Whisk together the eggs, milk, vanilla extract, and cinnamon in a shallow bowl until well combined.
  3. Mix the softened cream cheese with the chopped bacon in a separate small bowl.
  4. Create pockets by using a sharp knife to cut a pocket into each slice of bread and fill it generously with the bacon-cream cheese mixture.
  5. Dip each stuffed slice in the egg custard mixture, ensuring it’s well covered.
  6. Cook each stuffed slice in a large non-stick skillet with melted butter over medium heat for 3 to 4 minutes per side until golden brown.
  7. Make the glaze by gently warming the maple syrup, bourbon, vanilla extract, and a pinch of salt over low heat, about 2 minutes.
  8. Serve the French toast plated with a drizzle of warm maple bourbon glaze. Enjoy!

For best results, prepare the bacon and custard mixture the night before. Pair with fresh fruit and coffee for a complete meal.
