  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon

  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat your oven to 400°F (200°C). Place bacon slices on a wire rack above a baking tray. Bake for 15 minutes or until crispy. Transfer to paper towels to drain excess grease, then chop finely.
  2. In a shallow bowl, whisk together the eggs, whole milk, vanilla extract, and ground cinnamon until combined.
  3. In a separate small bowl, mix the softened cream cheese with the chopped bacon until well blended.
  4. Using a sharp knife, create a pocket in each slice of bread, filling it generously with the bacon-cream cheese mixture. Press the sides to seal well.
  5. Dip each stuffed slice into the egg custard, ensuring all sides are thoroughly coated.
  6. Heat unsalted butter in a non-stick skillet over medium heat. Cook the stuffed slices for about 3 to 4 minutes on each side, until golden brown.
  7. Meanwhile, warm the maple syrup, bourbon, vanilla extract, and a pinch of salt in a small saucepan over low heat, stirring until fragrant (about 2 minutes).
  8. Serve the French toast immediately, drenching it with the warm maple bourbon glaze.
