Delicious little pockets filled with scrambled eggs, cheese, and your choice of breakfast meat, perfect for any morning.

Ingredients

  • 1 can refrigerated biscuit dough
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons melted butter
  • 1 tablespoon chopped parsley or chives (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pan, scramble the eggs, seasoning with salt and pepper.
  3. Cook your choice of breakfast sausage or bacon, then crumble it into small pieces.
  4. Flatten each biscuit round on a clean surface.
  5. Spoon scrambled eggs, cheese, and crumbled meat into the center of each round.
  6. Pinch the edges to seal the filling inside the dough completely.
  7. Place the sealed balls seam-side down on a baking tray.
  8. Brush with melted butter and, if desired, sprinkle with parsley or chives.
  9. Bake for 15-18 minutes, or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to a month.
