  • 1 tablespoon butter
  • Salt and pepper (to taste)
  • 1/4 cup shredded cheddar cheese
  • 3 tablespoons fresh salsa
  • 1/2 avocado (cut into chunks, optional)

Instructions

  1. Preheat a cast iron skillet or heavy-bottomed pan over low-medium heat.
  2. In a medium-sized bowl, crack the eggs and whisk to blend the yolks. Season with salt and pepper, whisking until fluffy.
  3. Add the butter to the preheated skillet, swirling it to coat the surface.
  4. Pour the eggs into the skillet and let them spread into an even layer. After 20-30 seconds, gently scrape around the edges with a silicone spatula.
  5. Slide the spatula through the eggs to create soft curds. Cook until the eggs are just set, about 1-2 minutes.
  6. Transfer the scrambled eggs to a bowl. Top with shredded cheddar cheese, salsa, avocado chunks, and any other desired toppings.
