  • 2 tablespoons butter
  • 6 large eggs
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper
  • Sea salt & pepper (to taste)
  • 4 large tortillas (warmed)
  • 2 cups potatoes (roasted or pan-fried)
  • 1 cup cheddar cheese (grated)
  • 1 cup breakfast sausage (cooked and cut into pieces)
  • Sour cream
  • Salsa

Instructions

  1. Melt the butter in a skillet over medium heat.
  2. Add the eggs, garlic powder, cayenne pepper, sea salt, and pepper to the pan. Stir well and cook until the eggs are fluffy and cooked through.
  3. Lay out a warmed tortilla on a flat surface.
  4. In the center, load up with ½ cup of the fluffy scrambled eggs, ½ cup of golden potatoes, and a sprinkle of ¼ cup of cheddar cheese.
  5. For added flavor, include ¼ cup of savory breakfast sausage.
  6. Roll the tortilla tightly into a burrito, tucking in the sides as you go to avoid spills.
  7. Cook the rolled burrito in the skillet with a little butter or oil, turning until it’s golden brown on both sides. Alternatively, you can bake it at 350°F for 10 minutes.
  8. Serve immediately with a side of sour cream and salsa for dipping.

Notes

Consider adding sautéed spinach or mushrooms for extra flavor. Also, use high-quality tortillas for the best texture.
