Hearty and satisfying breakfast burritos filled with fluffy eggs, crispy potatoes, and cheese, perfect for brunch or quick weekday meals.

Ingredients

  • 4 large eggs
  • 2 medium potatoes, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup cooked and crumbled sausage or bacon (optional)
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • 4 large tortillas
  • Sour cream and salsa for serving (optional)

Instructions

  1. Heat a skillet over medium heat. Add the diced potatoes and cook until crispy and golden brown. Remove from the pan and set aside.
  2. Add the diced bell peppers and onions to the same skillet and sauté until soft.
  3. In a bowl, whisk the eggs, then pour into the skillet with the veggies and cook until fluffy.
  4. Add the crispy potatoes back into the skillet, mix in sausage or bacon if using, and season with salt and pepper.
  5. Place a portion of the filling in the center of a tortilla, top with cheese, and roll tightly.
  6. Optionally, wrap burritos in foil or plastic wrap and freeze for later.
  7. To enjoy, unwrap and microwave for 2-3 minutes until heated through.
  8. Serve with sour cream and salsa, if desired.

Notes

Store leftovers in the fridge for up to three days or freeze for up to three months. Reheat in the microwave or oven.
