A hearty breakfast casserole featuring pork sausage, fluffy eggs, and colorful vegetables; perfect for any occasion.

Ingredients

  • 2 pounds pork sausage
  • 12 eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×13-inch pan with cooking spray.
  2. Combine the eggs, sour cream, milk, shredded cheddar cheese, kosher salt, and black pepper in a large bowl. Use an electric mixer on low speed until just combined.
  3. Heat a skillet over medium heat. Add the pork sausage, cooking until browned and crumbly. Drain excess grease and stir the sausage into the egg mixture.
  4. Sauté the diced green and red bell peppers along with the chopped green onions in the same skillet for 2-3 minutes. Fold this vegetable mixture into the egg mixture.
  5. Pour the combined mixture into the greased pan. Bake for 35-50 minutes or until the edges are set and the center has a slight jiggle.
  6. Allow the casserole to cool slightly before cutting and serving.
