  • 1 cup mixed vegetables (bell peppers, onions, spinach)
  • 4 slices bacon
  • 6 large eggs
  • 1 cup cheese (cheddar or mozzarella)
  • 2 cups tater tots
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the breakfast sausage and bacon in a skillet over medium heat until browned.
  3. Drain off excess fat from the skillet.
  4. Whisk together eggs, milk, salt, and pepper in a large mixing bowl.
  5. Add the cooked sausage, bacon, chopped vegetables, and cheese, mixing well.
  6. Fold in tater tots until evenly coated.
  7. Pour mixture into a greased casserole dish, spreading it evenly.
  8. Bake for 30-40 minutes until eggs are set and top is golden brown.
  9. Let cool slightly before serving.
