A delicious Breakfast Croissant Sandwich with creamy scrambled eggs, crispy bacon, and melted cheddar cheese, perfect for any morning or brunch.

Ingredients

  • 2 large croissants
  • 2 large eggs
  • 2 slices cheddar cheese
  • 2 slices cooked bacon
  • 1 tablespoon butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat a skillet or frying pan over medium heat for about 1-2 minutes.
  3. Crack the eggs into a small bowl, careful not to break the yolks.
  4. Whisk the eggs with a fork until fully combined.
  5. Add the butter to the skillet and let it melt, swirling to coat the pan.
  6. Pour the beaten eggs into the skillet, spreading them evenly.
  7. Allow the eggs to cook for 1-2 minutes without stirring to set the edges.
  8. Lift the edges gently and tilt the pan to let uncooked egg flow to the edges.
  9. Once set, sprinkle salt and black pepper over the eggs.
  10. Fold the eggs in half or quarters, depending on skillet size.
  11. Remove the eggs from the skillet and set aside.
  12. Slice the croissants in half horizontally, taking care not to cut all the way through.
  13. Place the croissant halves cut side up on a baking sheet and bake for about 5 minutes until warm and slightly crisp.
  14. Spread mayonnaise on the bottom half and Dijon mustard on the top half of the croissants.
  15. Place a slice of cheddar cheese on the bottom half of each croissant.
  16. Layer a slice of cooked bacon on top of the cheese.
  17. Add the cooked eggs on top of the bacon.
  18. Place the top halves of the croissants on the assembled ingredients and press down gently.
  19. Serve immediately while warm.
