  • 1 cup pancake mix
  • 1 cup milk
  • 2 tablespoons butter
  • 1 cup vegetables (like peppers and onions)

Instructions

  1. Beat the eggs in a bowl until well mixed. Heat a skillet over medium-high heat. Pour in the eggs and sprinkle with cheese and diced ham. Cook until set, folding in half before removing from the heat.
  2. Layer beaten eggs, chopped potatoes, crumbled sausage, and shredded cheese in a baking dish. Bake in a preheated oven for about 25-30 minutes or until firm and golden.
  3. Mix pancake mix with milk in a bowl until smooth. Pour a ladleful onto a hot griddle. Wait for bubbles to form on the surface, then flip and cook until golden brown on both sides.
