An indulgent twist on a classic comfort food featuring breakfast sausage, scrambled eggs, and gooey Cheddar cheese on buttery sourdough bread.

  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. Cook the sausage: In a large non-stick skillet, crumble the ground sausage and cook over medium heat until browned. Remove the sausage from the skillet and set aside.
  2. Scramble the eggs: In the same skillet, melt 2 tablespoons of butter. Add the beaten eggs and scramble them gently until just set.
  3. Combine ingredients: In a bowl, mix the cooked sausage and scrambled eggs together until well combined.
  4. Assemble the sandwich: Butter one side of each slice of sourdough bread. Place one slice in the skillet, butter-side down. Layer on a slice of cheese, followed by the egg-sausage mixture, then top with another slice of cheese and finish with a second slice of bread (buttered side out).
  5. Grill the sandwich: Cook the sandwich in the skillet over medium heat. Grill for about 3-4 minutes on each side, until both sides are golden brown and the cheese is melty.
  6. Serve: Slice the sandwich in half and serve it hot for the best experience.

Notes

For added flavor, consider pre-seasoning your sausage and adding hot sauce to the eggs. Serve with a light side salad or fresh fruit.
