A comforting and hearty breakfast casserole featuring crispy hash browns, melty cheese, and a blend of bacon or sausage.

Ingredients

  • 4 cups frozen shredded hash browns (thawed)
  • 1 cup shredded cheddar cheese
  • ½ cup diced onion (red or yellow)
  • ½ cup diced bell pepper
  • ½ cup cooked bacon or sausage (turkey bacon works too)
  • ½ cup sour cream
  • ¼ cup melted butter
  • ¼ cup milk
  • 2 large eggs
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 baking dish.
  2. In a large mixing bowl, combine the thawed hash browns, cheddar cheese, diced onion, bell pepper, and your choice of cooked bacon or sausage. Mix everything well.
  3. In a separate bowl, whisk together sour cream, melted butter, milk, eggs, salt, and black pepper until smooth.
  4. Pour the wet mixture over the hash brown mixture and gently fold to combine.
  5. Spread this delicious concoction evenly in the prepared baking dish.
  6. Bake for 40-45 minutes, or until the casserole is golden and cooked through. To check, insert a toothpick; it should come out clean.
  7. Allow it to rest for 5 minutes before diving in!

Notes

Feel free to swap out the ingredients based on your preferences. Diced tomatoes or jalapeños can add a nice kick!
