A delightful twist on the classic dish, perfect for busy mornings or leisurely brunches, made with layers of eggs, chicken, vegetables, and cheese.

Ingredients

  • 10 large eggs
  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 6 large tortillas
  • 2 cups shredded cheese, your choice
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cups fresh spinach
  • Salt, Pepper, Cumin, Paprika to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, sauté the diced onions and bell peppers over medium heat until softened, about 5 minutes.
  3. Add the fresh spinach to the pan and cook until wilted, stirring occasionally.
  4. Meanwhile, in a bowl, whisk together the eggs. Season them with salt, pepper, cumin, and paprika to taste.
  5. In a greased baking dish, layer 2 tortillas at the bottom, covering as much surface area as possible.
  6. Add the shredded chicken on top of the tortillas, followed by the sautéed vegetables and salsa.
  7. Pour the seasoned egg mixture over the layered ingredients.
  8. Sprinkle the shredded cheese generously on top.
  9. Bake in the preheated oven for 25-30 minutes, until the eggs are set and the cheese is bubbly and lightly golden.
  10. Allow it to cool slightly before slicing. Serve warm and enjoy!
