Delightful bite-sized pancake treats baked in a mini muffin tin, perfect for busy mornings and family brunches.

Ingredients

  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your mini muffin tin and lightly grease it.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, combine the milk, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 3/4 full with batter.
  6. Bake in a preheated oven at 350°F (175°C) for 12–15 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Allow to cool slightly before serving.

Notes

For a healthier twist, swap in whole wheat flour or almond milk. Store leftovers in an airtight container for up to three days.
