  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Optional: 1/4 cup blueberries, mini chocolate chips, or diced strawberries

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
  2. Whisk together the flour, baking powder, sugar, and salt until well mixed in a large bowl.
  3. In another bowl, whisk the milk, egg, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the bowl of dry ingredients. Stir gently until just mixed—it’s okay if there are lumps!
  5. Carefully fold in any desired mix-ins like blueberries or mini chocolate chips.
  6. Spoon the batter into the mini muffin cups, filling them about two-thirds full.
  7. Bake for 10-12 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
  8. Let the poppers cool slightly before carefully removing them from the pan. Serve warm, drizzled with syrup, topped with fresh fruit, or sprinkled with powdered sugar.
