Delightful bite-sized pancakes perfect for busy mornings and brunches.

Ingredients

  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp melted butter
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F and grease a mini muffin pan.
  2. Combine the flour, sugar, baking powder, and salt in a mixing bowl.
  3. Whisk together the milk, egg, melted butter, and vanilla extract in another bowl until fully blended.
  4. Mix the wet ingredients into the dry ingredients gradually.
  5. Scoop the batter into each greased muffin pan cavity, filling them about two-thirds full.
  6. Bake for 10-12 minutes, or until golden brown and spring back when touched.
  7. Allow to cool slightly before serving warm with syrup.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
