Delicious and nutritious Breakfast Protein Biscuits loaded with Greek yogurt, spinach, and ham, perfect for busy mornings.

Ingredients

  • 1 + ¾ cups plain 2% Greek yogurt
  • 4 eggs
  • 2 + ½ cups all-purpose flour
  • ¼ cup ground flaxseed
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1.5 cups spinach, chopped
  • ½ cup chives, finely diced
  • 1.5 cups cheddar cheese, shredded, divided
  • 2 cups cooked ham, diced

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Whisk the Greek yogurt and eggs together in a medium mixing bowl until smooth and combined.
  3. Mix the all-purpose flour, ground flaxseed, garlic powder, red pepper flakes, baking powder, and salt in another bowl.
  4. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  5. Add the chopped spinach, diced chives, 1 cup of shredded cheese, and diced ham. Mix thoroughly until combined.
  6. Shape the dough into 12 equal round biscuits, about 1 inch thick.
  7. Place the biscuits on the lined baking tray and sprinkle the remaining cheese on top.
  8. Bake for 5 minutes at 400°F, then turn down the oven temperature to 350°F (175°C) and continue baking for an additional 20 minutes.
  9. Check that the biscuits are golden on the bottom and lightly browned on top.

Notes

These biscuits are great for meal prep and can be stored in an airtight container for up to 4 days or frozen for longer storage.
