  • 4 large flour tortillas
  • 1 pound ground turkey
  • 2 cups shredded Colby Jack cheese
  • 6 eggs
  • 1/2 cup milk
  • Salt and pepper to taste
  • Sliced green onions (for garnish)
  • Salsa (for serving)
  • Sour cream (for serving)

Instructions

  1. Begin by heating a skillet over medium heat. Add the ground turkey and brown it thoroughly, making sure to drain off any excess grease.
  2. In a separate mixing bowl, whisk together the eggs, milk, salt, and pepper until everything is well combined.
  3. Pour the egg mixture into the skillet with the turkey. Gently scramble the mixture over medium heat until the eggs are just set but still soft.
  4. Heat another skillet over medium heat. Lay the tortillas flat and on one half of each tortilla, spread the scrambled eggs first, then add the ground turkey, finishing with a sprinkle of cheese.
  5. Fold the tortillas over, creating half-moon shapes. Cook them in the heated skillet for 2-3 minutes on each side, or until they turn golden brown and crispy.
  6. Once cooked, transfer the quesadillas to a cutting board. Let them cool slightly before slicing into wedges. Serve warm with a side of salsa and sour cream.
