Delicious and cheesy breakfast quesadillas made with scrambled eggs, bell peppers, and cheddar cheese, perfect for busy mornings or leisurely brunches.

Ingredients

  • 2 large eggs
  • 1 cup bell peppers, diced
  • 1 cup shredded cheddar cheese
  • 2 flour tortillas
  • Salt and pepper to taste
  • Cooking oil or butter

Instructions

  1. In a bowl, whisk the eggs. Season with salt and pepper to taste.
  2. Heat a skillet over medium heat and add a splash of oil or a pat of butter.
  3. Add the diced bell peppers to the skillet and sauté them until they are soft.
  4. Pour in the whisked eggs, stirring gently until fully scrambled and cooked through.
  5. Lay one tortilla in the skillet. On top, layer half of the scrambled eggs and half of the cheddar cheese. Cover it with a second tortilla.
  6. Cook until the bottom tortilla is golden brown, then carefully flip it to cook the other side until it’s also golden and the cheese has melted.
  7. Remove the quesadilla from the skillet, slice into wedges, and serve warm.

Notes

For added flavor, serve with sour cream, salsa, or hot sauce. Leftover quesadillas can be stored in the refrigerator for up to 3 days.
