A delightful way to start your day with crispy bacon, scrambled eggs, and melted cheese wrapped in warm tortillas.

Ingredients

  • 2 large eggs
  • 4 slices of bacon
  • 1 cup shredded cheddar cheese
  • 4 tortillas
  • Salt and pepper to taste
  • Dipping sauces (optional)

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, then transfer to a plate lined with paper towels.
  2. Scramble the eggs in the same skillet, seasoning them lightly with salt and pepper.
  3. Lay a tortilla flat in the skillet. On one half, sprinkle half of the cheese, add the scrambled eggs and crumbled bacon, then top with the remaining cheese and fold the tortilla in half.
  4. Cook each quesadilla for 2-3 minutes on both sides until golden brown and the cheese has melted.
  5. Serve immediately with your choice of dipping sauces like salsa or sour cream.
