A hearty Breakfast Skillet filled with crispy bacon, eggs, and colorful veggies, perfect for brunch or a filling breakfast.

Ingredients

  • 4 slices of bacon
  • 4 eggs
  • 1 cup diced potatoes
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy. Remove bacon but keep drippings.
  2. Sauté the diced potatoes in the skillet until golden brown and tender, about 10 minutes.
  3. Add the diced bell peppers and onions. Cook for an additional 5 minutes until softened.
  4. Create wells in the potato mixture and crack one egg into each well.
  5. Cover the skillet and cook until eggs reach desired doneness.
  6. Season with salt and pepper to enhance flavors.
  7. Add crumbled bacon on top.
  8. Garnish with chopped parsley and serve hot.
