A delightful dish that combines the sweetness of sweet potato with savory bacon and eggs, topped with melted cheese.

  • 1 large sweet potato
  • 2 slices of bacon
  • 2 eggs
  • 1/2 cup of shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 1 tablespoon of olive oil
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potato thoroughly. Pierce it multiple times with a fork. Place it on a baking sheet and bake for 45-60 minutes until tender.
  3. While the sweet potato bakes, cook the bacon in a skillet over medium heat until crispy. Remove it from the skillet and let it drain on paper towels.
  4. In the same skillet, crack the eggs and cook them to your desired doneness.
  5. When the sweet potato is finished, take it out of the oven and let it cool slightly. Once it’s cool, cut it open.
  6. Fluff the insides of the sweet potato with a fork. Layer in the cooked bacon, eggs, and shredded cheese.
  7. Season with salt and pepper to taste. Garnish with green onions or parsley if desired, and serve warm.

Notes

This dish is versatile; feel free to switch up the cheese or bacon type. It can also be prepped ahead of time.
