Breakfast Sweet Potato

A hearty and nutritious breakfast sweet potato dish, combining sweet potato with crispy bacon and eggs, topped with cheese.

Ingredients

  • 1 large sweet potato
  • 2 slices of bacon
  • 2 eggs
  • 1/2 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • Chives or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potato thoroughly, then pierce it with a fork. Place it in the oven and bake for about 45 minutes, until tender.
  3. Cook the bacon in a skillet over medium heat until crispy, then remove and chop it into bite-sized pieces.
  4. Crack the eggs into the same skillet and cook them to your preferred doneness.
  5. Let the sweet potato cool for a few minutes. Cut it in half lengthwise and scoop out a bit of the flesh.
  6. Mix the scooped sweet potato with the chopped bacon, adding salt and pepper to taste.
  7. Fill each half of the sweet potato with the mixture. Add the cooked eggs on top and sprinkle with cheese.
  8. Return to the oven for an additional 5–10 minutes, until the cheese melts.
  9. Garnish with chives or green onions if desired, and serve warm.

Notes

For a vegetarian option, omit the bacon and consider adding mushrooms or avocado.
