Breakfast Taquitos

Delicious breakfast taquitos filled with sausage, scrambled eggs, and cheese, perfect for any time of the day.

Ingredients

  • 7-ounce box fully cooked sausage links
  • 5 large eggs
  • Salt and freshly ground black pepper
  • 1 1/2 cups shredded cheese (your favorite kind)
  • 10 white corn tortillas (or use 6″ flour tortillas)

Instructions

  1. Preheat your oven to 425 degrees F.
  2. Warm the sausages in a large skillet over medium-high heat. Turn occasionally until warmed through; then, remove them to a plate.
  3. Whisk the eggs with a splash of water or milk in a bowl. Pour them into the skillet, season with salt and pepper, and cook until fully set.
  4. Warm the tortillas in a hot, dry skillet until they’re soft and pliable.
  5. Assemble by placing scrambled eggs, a sausage link, and shredded cheese on each tortilla. Roll them tightly and lay them seam-side down on a baking sheet lined with foil or parchment paper.
  6. Lightly spray the rolled taquitos with cooking spray, then bake for 10-15 minutes until golden brown and crispy.
  7. Serve with salsa for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in a preheated oven for best results.
