A delightful Broccoli Cheddar Egg Bake with Turkey Bacon that’s perfect for any occasion, offering a melty cheese and vegetable combination.

  • 1 head of broccoli, chopped
  • 1/2 large yellow onion, diced
  • 5 slices of turkey bacon
  • 8 eggs
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • Pepper to taste

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Cook the turkey bacon according to package instructions. Once done, remove it from the pan and chop into small pieces.
  3. In the same pan, heat the olive oil over medium heat. Add the chopped broccoli and diced onion. Season with salt and pepper to taste. Sauté for about 5 to 10 minutes until the veggies are nice and tender.
  4. While the vegetables are cooking, whisk the eggs in a mixing bowl. Stir in the shredded cheddar cheese, garlic powder, a dash of salt, and pepper until well combined.
  5. Remove the sautéed veggies from the heat and transfer them to a greased large baking dish. Mix in the chopped turkey bacon and make sure they’re evenly spread out.
  6. Pour the egg mixture over the veggies and bacon, ensuring everything is well covered. Sprinkle some extra cheese on top if you desire.
  7. Bake in the preheated oven for about 20 minutes, or until the eggs are set and the top is golden brown.
  8. Allow the dish to cool slightly, then cut into squares and enjoy!
