A quick and nutritious breakfast featuring rolled oats, chia seeds, and ripe bananas, sweetened with brown sugar.

Ingredients

  • 2 cups rolled oats
  • 4 tablespoons chia seeds
  • 34 tablespoons brown sugar
  • 1 cup mashed banana (about 2 ripe bananas)
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • ¼ teaspoon cinnamon (or more, to taste)
  • 2 cups milk

Instructions

  1. In a large bowl, combine the rolled oats, chia seeds, brown sugar, and mashed bananas.
  2. Add in the cinnamon, salt, vanilla extract, and milk.
  3. Stir everything together until well incorporated.
  4. Cover the bowl with a lid or plastic wrap.
  5. Refrigerate for at least 4 hours, but leaving it overnight allows the flavors to meld beautifully.
  6. When you’re ready to enjoy, scoop out a portion and top it with your favorite toppings, such as nuts, berries, or yogurt.

Notes

For a plant-based version, substitute milk with almond milk or any dairy-free alternative. Store leftovers in an airtight container for up to 5 days.
