Delicious and comforting Cheddar Bacon Muffins filled with crispy bacon and sharp cheddar, perfect for brunch or a quick snack.

  • 1 cup all-purpose flour
  • 1 cup shredded cheddar cheese
  • 4 slices bacon (cooked until crispy and crumbled)
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup milk
  • 0.3 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or lightly grease it.
  2. Cook the bacon in a skillet until crispy. Once done, crumble it into small pieces and set it aside to cool.
  3. In a large bowl, whisk together the flour, baking powder, and salt until well combined.
  4. In another bowl, beat the eggs, then add the milk and vegetable oil, whisking until smooth.
  5. Pour the wet ingredients into the dry mixture. Fold gently until just combined. Be careful not to overmix!
  6. Add the shredded cheddar cheese and crumbled bacon to the mixture, folding gently to distribute evenly.
  7. Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
  8. Bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely. Serve warm or at room temperature.

Notes

For perfect muffins, ensure your baking powder is fresh and avoid overmixing the batter. Can be served with butter or cream cheese.
