  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled breakfast sausage
  • 2 large eggs
  • 1 cup buttermilk
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, whisk the flour, baking powder, baking soda, salt, and black pepper together until combined.
  3. Gently fold in the shredded cheddar cheese and crumbled breakfast sausage, ensuring they’re evenly distributed.
  4. In another bowl, whisk together the eggs, buttermilk, and melted butter until smooth.
  5. Pour the wet mixture into the dry ingredients. Stir gently until just combined; don’t overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake for 18-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool slightly before removing them from the tin and serving warm.
