A quick and satisfying dish perfect for family dinners, featuring baked chicken breasts with vibrant bell peppers and rich, bubbling cheese.

  • 4 boneless (skinless chicken breasts)
  • 2 bell peppers (any color, thinly sliced)
  • 1 small onion (thinly sliced, optional)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella (or a mozzarella-cheddar blend)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Place the chicken breasts in the dish. Drizzle with 1 tablespoon of olive oil, then season both sides with Italian seasoning, garlic powder, paprika, salt, and black pepper. Rub the spices into the chicken.
  3. In a separate bowl, toss the thinly sliced bell peppers (and optional onions) with the remaining olive oil. Arrange them around and over the chicken.
  4. Bake uncovered for 20 to 25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  5. Remove from the oven and sprinkle mozzarella and Parmesan over the chicken and vegetables. Return to the oven for an additional 3 to 5 minutes until the cheese is melted and bubbling.
  6. Garnish with freshly chopped parsley before serving.

Notes

For enhanced flavor, consider searing the chicken in a skillet for a few minutes before baking. Fresh herbs like basil or oregano can elevate the dish.
