Delightful cheesy breakfast quesadillas that are quick, easy, and satisfying for busy mornings or relaxed brunches.

Ingredients

  • 2 flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 eggs
  • 1/4 cup cooked vegetables (like bell peppers or onions, optional)
  • Salt and pepper to taste
  • Cooking spray or butter

Instructions

  1. Heat a non-stick skillet over medium heat.
  2. In a bowl, scramble the eggs with salt and pepper until well combined.
  3. Spray the skillet with cooking spray or melt a bit of butter for flavor.
  4. Place one tortilla in the skillet and sprinkle half of the shredded cheese on top.
  5. Pour the scrambled eggs over the cheese; add the cooked vegetables if you like.
  6. Top with the remaining cheese and cover it with the second tortilla.
  7. Cook for 3-4 minutes or until the bottom tortilla is golden brown.
  8. Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are crispy and the cheese is melted.
  9. Remove from the skillet, slice, and serve with your favorite dips.

Notes

Serve with sour cream, salsa, or guacamole. Can be made with different types of cheese or tortillas for variety.
