  • 2 large Eggs (Substitute with egg alternatives for dairy-free)
  • 1/2 cup Cheese (Cheddar, mozzarella, or pepper jack)
  • 2 tablespoons Fresh Herbs (Chives, parsley, or cilantro)
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1/4 teaspoon Cayenne Pepper (Optional)
  • 1 cup Sautéed Vegetables (Spinach, mushrooms, or tomatoes)
  • 2 tablespoons Honey (Optional for sweet version)
  • 1 cup Fresh Fruits (Optional for sweet serving)

Instructions

  1. Preheat your oven’s broiler to high.
  2. Toast the bread slices until they are golden brown and crispy on the outside.
  3. In a skillet, sauté your choice of vegetables (such as spinach, mushrooms, or tomatoes) until they’re tender.
  4. Whisk together the eggs, cheese, fresh herbs, salt, pepper, and optional cayenne in a bowl until combined.
  5. Layer the sautéed vegetables over the toasted bread.
  6. Pour the egg mixture over the layered veggies.
  7. Place the assembled toast under the broiler for about 3-5 minutes, until the eggs are set and the cheese is bubbling and golden.
  8. For a sweet version, drizzle with honey and serve fresh fruit on the side.
