Ingredients
Scale
4 chicken breasts
1 cup mushrooms, chopped
4 tablespoons butter
3 garlic cloves, minced
1 cup shredded cheese (mozzarella or cheddar)
1 teaspoon Italian seasoning
Salt and pepper to taste
Olive oil for cooking
Instructions
Preheat your oven to 375°F (190°C).
Melt butter in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
Toss in the chopped mushrooms along with Italian seasoning. Cook until the mushrooms soften, approximately 4-5 minutes.
Season with salt and pepper, then remove the mixture from heat.
Using a sharp knife, cut a pocket into each chicken breast. Stuff them with the mushroom mixture, topping each with a generous amount of shredded cheese.
Sear the stuffed chicken breasts in olive oil until golden brown on both sides, around 3-4 minutes per side.
Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
Serve warm and enjoy the savory goodness!
Notes
Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (74°C) for perfect doneness.
