  • 1 cup mushrooms, chopped
  • 4 tablespoons butter
  • 3 garlic cloves, minced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Melt butter in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Toss in the chopped mushrooms along with Italian seasoning. Cook until the mushrooms soften, approximately 4-5 minutes.
  4. Season with salt and pepper, then remove the mixture from heat.
  5. Using a sharp knife, cut a pocket into each chicken breast. Stuff them with the mushroom mixture, topping each with a generous amount of shredded cheese.
  6. Sear the stuffed chicken breasts in olive oil until golden brown on both sides, around 3-4 minutes per side.
  7. Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
