  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar, mozzarella, or your preference)
  • 1/2 cup diced vegetables (like bell peppers, spinach, or onions)
  • Salt and pepper to taste
  • Cooking spray or muffin tin liners

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare your muffin tin by either spraying it with cooking spray or lining it with muffin liners.
  2. In a mixing bowl, whisk the 6 large eggs until well beaten.
  3. Stir in the cottage cheese, shredded cheese, diced vegetables, and season with salt and pepper. Mix until well combined.
  4. Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
