  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)

  • Salt and pepper to taste
  • Cooking spray or oil for muffin tin

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Whisk together the eggs, cottage cheese, and shredded cheese until well combined.
  3. Stir in your chopped vegetables and season with salt and pepper.
  4. Grease a muffin tin with cooking spray or a light drizzle of oil.
  5. Pour the egg mixture into each muffin cup, filling them about 3/4 full.
