These protein-packed cheesy egg bites are perfect for quick breakfasts, easy lunches, or satisfying snacks.

  • 1 cup cottage cheese
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup chopped vegetables (bell peppers, spinach, etc.)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  2. In a large bowl, whisk together the eggs, cottage cheese, and shredded cheese until well combined.
  3. Fold in the chopped vegetables and season with salt and pepper to taste.
  4. Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 18-22 minutes, or until the egg bites are set and lightly golden on top.
