A comforting dish featuring crispy potatoes, fluffy eggs, and gooey cheese, perfect for breakfast, lunch, or dinner.

  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 1 cup diced ham or bacon (optional)
  • 2 tablespoons olive oil
  • Chopped green onions (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook for about 10-15 minutes, stirring occasionally, until they’re crispy and golden brown.
  3. In a separate bowl, whisk the eggs and season with salt and pepper.
  4. If using ham or bacon, toss it into the skillet once the potatoes are done.
  5. Push the potatoes to one side and pour the beaten eggs into the skillet.
  6. Stir gently to scramble the eggs as they cook.
  7. Just before the eggs are fully cooked, sprinkle the cheddar cheese on top.
  8. Stir everything together until the eggs are fully cooked and the cheese has melted.
  9. Garnish with chopped green onions before serving.

Notes

For crispiest potatoes, avoid overcrowding the skillet. Use a non-stick skillet for easier cleanup.
