A hearty and comforting brunch option that combines fluffy scrambled eggs, crispy potatoes, and gooey cheddar cheese.

  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: cooked ham or bacon, chopped
  • Salt and pepper to taste
  • 1 tbsp olive oil or butter
  • Chopped green onions for garnish

Instructions

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and cook until they’re golden and crispy, about 10-15 minutes.
  3. In a bowl, whisk together the eggs, salt, and pepper until fully combined.
  4. Push the potatoes to one side of the skillet and pour the whisked eggs into the opposite side. Scramble the eggs until completely cooked.
  5. Stir in the cheese and optional ham or bacon until melted and combined.
  6. Serve hot, garnished with chopped green onions.

Notes

For a fun twist, substitute regular potatoes with sweet potatoes and try different cheeses like mozzarella or pepper jack.
