A comforting and quick dish combining diced potatoes, eggs, and melted cheddar cheese for a hearty breakfast or brunch.

  • 2 medium potatoes, diced
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • Optional: 1/2 cup diced ham or bacon
  • Salt and pepper to taste
  • Cooking oil or butter

Instructions

  1. Heat oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and season them generously with salt and pepper. Sauté until golden and tender, about 10-15 minutes.
  3. In a separate bowl, whisk the eggs together with salt and pepper until combined.
  4. Once the potatoes are cooked, push them to one side of the skillet. Pour the whisked eggs into the empty space and scramble them until fluffy.
  5. Stir in the shredded cheddar cheese and optional ham or bacon. Cook until heated through and the cheese is melted.
  6. Serve hot and enjoy!
