  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook until crispy and golden, about 10-15 minutes, stirring occasionally.
  3. Whisk together the eggs, salt, and pepper in a bowl.
  4. Pour the egg mixture over the cooked potatoes in the skillet.
  5. If using, add diced ham or bacon now and stir gently to combine.
  6. Cook until the eggs are just set, about 3-5 minutes.
  7. Sprinkle shredded cheddar cheese over the top and cover to let the cheese melt.
  8. Garnish with chopped green onions if desired and serve warm.
