A comforting dish of crispy potatoes, fluffy scrambled eggs, and gooey cheddar cheese, perfect for breakfast or dinner.

  • 2 medium potatoes, diced
  • 4 eggs
  • 1 cup cheddar cheese, shredded
  • 1/2 cup cooked ham or bacon (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook until crispy and golden brown, about 10-15 minutes. Don’t forget to season with salt and pepper!
  3. Whisk the eggs in a separate bowl while the potatoes are cooking.
  4. Pour the whisked eggs into the skillet once the potatoes are beautifully brown.
  5. Stir gently to combine, scrambling the eggs with the potatoes until nearly set.
  6. Add in the shredded cheddar cheese and the optional ham or bacon.
  7. Stir until the cheese has melted and the eggs are fully cooked.
  8. Garnish with chopped green onions if desired, and serve hot.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat gently in a skillet or microwave.
